Former Head Chef of The Sibton White Horse (2 AA Rosette) and Senior-Sous and Sous Chef of Adnams Swan and Crown Hotels, I have lived and worked in Suffolk my whole life.
My ethos is to use local suppliers where possible to create seasonal menus from the highest quality ingredients. The cliché of local sourcing has almost become somewhat of a cliché in itself as the ‘on-trend’ thing to do; however it is my belief that if you’re going to do it, you do it properly, so I make provenance and seasonality the natural feature of my menus without being overbearing.

I am more than happy to adapt any dishes for allergy or dietary requirements on request and we always have vegetarian options available – please just ask a member of the team.
